Bibingka

The All Filipino Bibingka

This is an all Filipino Bibingka or Rice Cake. It is baked in a kiln like this for a few minutes then served hot in its magnificent golden brown color with some grated coconut on the top. It's a must try if you ever drop by the Philippines.

An upscale Filipino restaurant in New York (Cendrillon) is famous for serving this for brunch on Sundays. They call it Philippine pancake. Dinadayo sila dahil dito.
